Grand Champion Sponge Cake

Ingredients

  • 1.25 cups sifted flour
  • 1.0 cup sugar
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 6.0 egg whites
  • 1.0 tsp cream of tartar
  • 0.5 cup sugar
  • 6.0 egg yolks
  • 0.25 cup water
  • 1.0 tsp vanilla

Directions

  • 1. Sift flour, 1 cup sugar, baking powder, and salt.
  • 2. Beat egg whites until frothy, add cream of tartar.
  • 3. Gradually beat in 1/2 cup sugar until stiff peaks form.
  • 4. Combine egg yolks, water, vanilla, and dry ingredients, beat 4 minutes.
  • 5. Fold yolk mixture into egg whites.
  • 6. Pour into an ungreased 10” tube pan.
  • 7. Bake at 350°F for 45 minutes.
  • 8. Invert to cool.
