Ingredients
- 0.75 cup shortening
- 1.5 cups sugar
- 2.0 eggs
- 1.0 cup mashed bananas
- 0.5 cup buttermilk
- 1.0 tsp vanilla
- 2.0 cups sifted cake flour
- 0.5 tsp salt
- 1.0 tsp baking soda
- 1.0 tsp baking powder
- 0.5 cup chopped pecans
- 1.0 cup flaked coconut
Directions
- 1. Cream shortening and sugar until fluffy.
- 2. Add eggs, beat 2 minutes.
- 3. Add mashed bananas, beat 2 minutes.
- 4. Sift dry ingredients, add with buttermilk and vanilla, beat 2 minutes.
- 5. Stir in nuts.
- 6. Pour into 2 greased and floured 9” pans.
- 7. Sprinkle 1/2 cup coconut on each layer.
- 8. Bake at 375°F for 25-30 minutes.
- 9. Cool coconut side up.
