Blue Ribbon Banana Cake

Ingredients

  • 0.75 cup shortening
  • 1.5 cups sugar
  • 2.0 eggs
  • 1.0 cup mashed bananas
  • 0.5 cup buttermilk
  • 1.0 tsp vanilla
  • 2.0 cups sifted cake flour
  • 0.5 tsp salt
  • 1.0 tsp baking soda
  • 1.0 tsp baking powder
  • 0.5 cup chopped pecans
  • 1.0 cup flaked coconut

Directions

  • 1. Cream shortening and sugar until fluffy.
  • 2. Add eggs, beat 2 minutes.
  • 3. Add mashed bananas, beat 2 minutes.
  • 4. Sift dry ingredients, add with buttermilk and vanilla, beat 2 minutes.
  • 5. Stir in nuts.
  • 6. Pour into 2 greased and floured 9” pans.
  • 7. Sprinkle 1/2 cup coconut on each layer.
  • 8. Bake at 375°F for 25-30 minutes.
  • 9. Cool coconut side up.
