Ingredients
- 1.5 cups sugar
- 2.0 cups unsifted all-purpose flour
- 2.0 eggs
- 2.0 tsp baking soda
- 1.0 tbsp water
- 1.0 No. 3 can unpeeled apricot halves
- 0.25 cup brown sugar
- 0.25 cup chopped nuts
- 0.666 cup milk (icing)
- 0.75 cup white sugar (icing)
- 2.0 tbsp margarine (icing)
- 1.0 tsp vanilla (icing)
Directions
- 1. Mix sugar, flour, and eggs by hand.
- 2. Dissolve baking soda in water, add to mixture.
- 3. Drain 1/4 cup juice from apricots, stir apricots into mixture.
- 4. Pour into a 9x13” ungreased pan.
- 5. Mix brown sugar and nuts, sprinkle over batter.
- 6. Bake at 325°F for 35-40 minutes.
- 7. Boil milk, white sugar, and margarine for 5 minutes for icing.
- 8. Add vanilla to icing, spoon over hot cake.
