Apricot Cake

Ingredients

  • 1.5 cups sugar
  • 2.0 cups unsifted all-purpose flour
  • 2.0 eggs
  • 2.0 tsp baking soda
  • 1.0 tbsp water
  • 1.0 No. 3 can unpeeled apricot halves
  • 0.25 cup brown sugar
  • 0.25 cup chopped nuts
  • 0.666 cup milk (icing)
  • 0.75 cup white sugar (icing)
  • 2.0 tbsp margarine (icing)
  • 1.0 tsp vanilla (icing)

Directions

  • 1. Mix sugar, flour, and eggs by hand.
  • 2. Dissolve baking soda in water, add to mixture.
  • 3. Drain 1/4 cup juice from apricots, stir apricots into mixture.
  • 4. Pour into a 9x13” ungreased pan.
  • 5. Mix brown sugar and nuts, sprinkle over batter.
  • 6. Bake at 325°F for 35-40 minutes.
  • 7. Boil milk, white sugar, and margarine for 5 minutes for icing.
  • 8. Add vanilla to icing, spoon over hot cake.
