3 Flour Bread

Ingredients

  • 2.0 pkgs yeast
  • 0.25 cup warm water
  • 1.0 cup white flour
  • 3.0 cups whole wheat flour
  • 1.0 cup rye flour
  • 4.0 cups warm water
  • 1.0 cup dry milk
  • 0.5 cup brown sugar
  • 6.0 tbsp shortening
  • 1.5 tbsp salt
  • 5.5 cups white flour

Directions

  • 1. Combine yeast and 1/4 cup warm water, set aside.
  • 2. Mix dry ingredients with 4 cups warm water and beat.
  • 3. Add yeast mixture and beat.
  • 4. Add shortening and salt, beat again.
  • 5. Let rest 10 minutes.
  • 6. Add remaining flour and knead 8-10 minutes.
  • 7. Let rise until doubled.
  • 8. Punch down and form into 4 loaves.
  • 9. Bake at 375°F for 40-45 minutes.
