Ingredients
- 8.0 eggs
- 0.25 cup all-purpose flour
- 0.25 tsp salt
- 0.25 tsp pepper
- 1.0 amount milk
- 0.25 cup grated cheese (optional)
- 1.5 cups filling (e.g., spinach and ricotta, peppers and cream cheese, or ham and cheddar)
Directions
- 1. Preheat oven to 350°F.
- 2. Coat a 12x17” jelly roll pan with nonstick spray and waxed paper.
- 3. Separate eggs, beat whites until stiff.
- 4. Mix yolks with flour, salt, and pepper.
- 5. Add 1/2 cup beaten whites to yolks, then fold in remaining whites.
- 6. Spread evenly in pan and bake for 10 minutes.
- 7. Invert onto a towel, remove paper, and roll up to cool.
- 8. Prepare filling.
- 9. Unroll cooled egg, brush with milk, spread filling, and roll up.
- 10. Brush with milk, sprinkle with cheese if desired, and bake for 10 minutes.
- 11. Cut into 1.5” pinwheels.
