Egg Pinwheels

Ingredients

  • 8.0 eggs
  • 0.25 cup all-purpose flour
  • 0.25 tsp salt
  • 0.25 tsp pepper
  • 1.0 amount milk
  • 0.25 cup grated cheese (optional)
  • 1.5 cups filling (e.g., spinach and ricotta, peppers and cream cheese, or ham and cheddar)

Directions

  • 1. Preheat oven to 350°F.
  • 2. Coat a 12x17” jelly roll pan with nonstick spray and waxed paper.
  • 3. Separate eggs, beat whites until stiff.
  • 4. Mix yolks with flour, salt, and pepper.
  • 5. Add 1/2 cup beaten whites to yolks, then fold in remaining whites.
  • 6. Spread evenly in pan and bake for 10 minutes.
  • 7. Invert onto a towel, remove paper, and roll up to cool.
  • 8. Prepare filling.
  • 9. Unroll cooled egg, brush with milk, spread filling, and roll up.
  • 10. Brush with milk, sprinkle with cheese if desired, and bake for 10 minutes.
  • 11. Cut into 1.5” pinwheels.
