
Lime-preserved crisp pickles

Ingredients
- 7.0 lb large cucumbers or green tomatoes, sliced
- 2.0 cups lime
- 2.0 gallons water (for lime solution)
- 2.0 quarts vinegar
- 4.5 lb sugar
- 1.0 tsp celery seed
- 1.0 tsp mixed pickling spices
- 7.5 tbsp salt
- 1.0 cup raisins (optional)
Directions
- 1. Cover sliced cucumbers or tomatoes with a lime solution (2 cups lime in 2 gallons water) and soak for 24 hours.
- 2. Rinse well, cover with cold water, and soak 3 hours more, then drain.
- 3. Mix vinegar, sugar, celery seed, pickling spices, and salt, then soak slices in this mixture overnight.
- 4. Boil mixture with slices for 35 minutes.
- 5. Add raisins and boil 5 minutes more.
- 6. Pack into clean, hot jars and seal.
