Crunchy Corn Medley

Crisp corn and veggie mix

Ingredients

  • 2.0 cups frozen peas, thawed
  • 1.0 15.25-oz can whole kernel corn, drained
  • 1.0 15.25-oz can white or shoepeg corn, drained
  • 1.0 8-oz can water chestnuts, drained and chopped
  • 1.0 4-oz jar diced pimientos, drained
  • 8.0 green onions, thinly sliced
  • 2.0 celery ribs, chopped
  • 1.0 medium green pepper, chopped
  • 0.5 cup vinegar
  • 0.5 cup sugar
  • 0.25 cup vegetable oil
  • 1.0 tsp salt
  • 0.25 tsp pepper

Directions

  • 1. Combine peas, both corns, water chestnuts, pimientos, green onions, celery, and green pepper in a large bowl.
  • 2. Whisk vinegar, sugar, oil, salt, and pepper in a small bowl until sugar dissolves.
  • 3. Pour dressing over corn mixture and mix well.
  • 4. Cover and refrigerate for at least 3 hours.
  • 5. Stir just before serving and use a slotted spoon.
