Vegetable Beef Soup

Chunky beef and veggie stew

Ingredients

  • 2.5 lb round steak, cut into ½-inch cubes
  • 1.0 tbsp shortening
  • 2.0 tbsp dried minced onion
  • 3.0 quarts water
  • 5.0 potatoes, cubed
  • 3.0 carrots, cubed
  • 4.0 celery sticks, sliced
  • 0.5 head cabbage, cubed
  • 2.0 tsp salt
  • 0.5 tsp pepper
  • 1.0 large package frozen peas
  • 2.5 cups tomato juice

Directions

  • 1. Heat shortening in a large kettle and brown cubed steak with minced onion.
  • 2. Add water and simmer 2-2½ hours.
  • 3. Add potatoes, carrots, celery, cabbage, salt, and pepper, then simmer 1-1½ hours.
  • 4. Add peas and tomato juice, adjusting water for desired consistency.
  • 5. Heat through and serve.
