
Savory sausage and greens soup

Ingredients
- 2.0 tbsp olive oil
- 2.0 medium onions, thinly sliced
- 2.0 lb all-purpose potatoes, peeled and cut into 1½-inch chunks
- 8.0 cups water
- 1.0 13.75-oz can reduced-sodium chicken broth
- 1.75 tsp salt
- 1.0 small bunch kale, washed and dried
- 1.0 lb Jirak Italian pork sausage
- 0.25 tsp pepper
- 1.0 tsp fennel seed
Directions
- 1. Heat oil in a large soup pot over medium heat, add onions, and cook until softened, about 8 minutes.
- 2. Add potatoes, water, broth, and salt, bring to a boil, then reduce to medium and cook 25 minutes until potatoes are tender.
- 3. Slice kale into ¼-inch strips while potatoes cook.
- 4. Remove soup from heat, cool 10 minutes, then gently mash potatoes, leaving some chunks.
- 5. Fry sausage, crumbling until brown, drain, and add to pot with fennel seed.
- 6. Cook on medium-low for 30 minutes, then add kale and cook 5 minutes until wilted.
- 7. Season with pepper before serving.
