
Hearty chicken and barley broth

Ingredients
- 2.5 lb broiler-fryer chicken, cut up
- 2.0 quarts water
- 1.5 cups diced carrots
- 1.0 cup diced celery
- 0.5 cup barley
- 0.5 cup chopped onion
- 1.0 chicken bouillon cube (optional)
- 1.0 tsp salt (optional)
- 1.0 bay leaf
- 0.5 tsp poultry seasoning
- 0.5 tsp pepper
- 0.5 tsp dried ground sage
Directions
- 1. Cook chicken in water in a large kettle until tender.
- 2. Cool broth and skim off fat.
- 3. Bone chicken, cut into bite-sized pieces, and return to kettle.
- 4. Add carrots, celery, barley, onion, bouillon, salt, bay leaf, poultry seasoning, pepper, and sage.
- 5. Simmer covered for at least 1 hour until vegetables and barley are tender.
- 6. Remove bay leaf.
