
Cheesy pineapple gelatin salad

Ingredients
- 2.0 boxes lemon jello
- 2.0 cups boiling water
- 2.0 cans chunk pineapple, drained (reserve juice)
- 2.5 cups finely grated cheese
- 1.5 8-oz packages Cool Whip
Directions
- 1. Dissolve jello in boiling water, then add reserved pineapple juice.
- 2. Refrigerate until thick but not firm.
- 3. Blend pineapple in a food processor until fine.
- 4. Add cheese and pineapple to thickened jello.
- 5. Fold in Cool Whip.
