Yum-Yum Salad

Cheesy pineapple gelatin salad

Ingredients

  • 2.0 boxes lemon jello
  • 2.0 cups boiling water
  • 2.0 cans chunk pineapple, drained (reserve juice)
  • 2.5 cups finely grated cheese
  • 1.5 8-oz packages Cool Whip

Directions

  • 1. Dissolve jello in boiling water, then add reserved pineapple juice.
  • 2. Refrigerate until thick but not firm.
  • 3. Blend pineapple in a food processor until fine.
  • 4. Add cheese and pineapple to thickened jello.
  • 5. Fold in Cool Whip.
