Acini de Pepe Salad (Frog Eye Salad)

Creamy pasta and fruit salad

Ingredients

  • 1.0 cup acini de pepe
  • 3.0 cups salt water (½ tsp salt)
  • 1.0 #303 can crushed pineapple
  • 2.0 cans mandarin orange segments
  • 3.0 whole eggs
  • 3.0 tbsp flour
  • 1.0 cup sugar
  • 1.0 cup miniature marshmallows (colored)
  • 1.0 9-oz container Cool Whip

Directions

  • 1. Boil acini de pepe in salt water until water boils away.
  • 2. Drain juices from pineapple and oranges, reserving the juice.
  • 3. Cook reserved juice with eggs, flour, and sugar until thickened, then cool.
  • 4. Mix acini de pepe into thickened mixture and refrigerate overnight.
  • 5. Add fruit, marshmallows, and Cool Whip the next morning.
