Sugar Free Apple Pie

Light apple pie with double crust

Ingredients

  • 6.0 oz can frozen apple juice
  • 2.0 tbsp flour, rounded
  • 1.0 tsp cinnamon
  • 0.25 tsp salt
  • 5.0 apples, peeled and sliced
  • 0.0 margarine
  • 0.0 nutmeg
  • 2.0 cups flour (for crust)
  • 1.0 tsp salt (for crust)
  • 0.75 cup shortening (for crust)
  • 0.25 cup ice water (for crust)

Directions

  • 1. Cook apple juice, flour, cinnamon, and salt until thickened.
  • 2. Stir in sliced apples.
  • 3. Pour into a pie shell and dot with margarine.
  • 4. For crust, blend flour, salt, and shortening until coarse.
  • 5. Add ice water to crust mixture and mix, then roll out for two 9-inch crusts.
  • 6. Add top crust, sprinkle with water and nutmeg.
  • 7. Bake at 450°F for 15 minutes, then at 350°F for 30 minutes.
