
Rich coconut custard pie

Ingredients
- 1.0 cup evaporated milk
- 1.0 cup water
- 1.0 cup sugar
- 1.0 heaping tbsp flour
- 2.0 egg yolks
- 0.0 salt to taste
- 0.0 coconut
Directions
- 1. Mix evaporated milk and water, bring to a boil, stirring constantly, then set aside.
- 2. Mix sugar, flour, egg yolks, and salt into a paste.
- 3. Add a little hot milk mixture to the paste, then combine with the remaining milk mixture.
- 4. Cook until thick.
- 5. Stir in coconut.
- 6. Pour into a baked pie shell and top with meringue.
