
Preserved pear halves

Ingredients
- 0.0 pears
- 2.0 tbsp vinegar
- 2.0 tbsp salt
- 4.0 quarts cold water
- 0.25 tsp almond extract (per quart)
- 1.0 tsp fresh lemon juice (per quart)
- 2.0 cups sugar (for syrup)
- 4.0 cups water (for syrup)
Directions
- 1. Wash, drain, halve, peel, and core pears.
- 2. Soak pears in a vinegar-salt water solution (2 tbsp each vinegar and salt to 4 quarts water).
- 3. Rinse, drain, and pack pears into jars within ½-inch of the top.
- 4. Add almond extract and lemon juice to each quart jar.
- 5. Boil sugar and water for 2-3 minutes to make syrup.
- 6. Cover pears with hot syrup, adjust lids, and process in a boiling water bath for 25 minutes (pints) or 30 minutes (quarts).
