Cream Puffs

Light and creamy pastries

Ingredients

  • 1.5 cups boiling water
  • 0.25 cup butter
  • 0.5 cup sifted flour
  • 0.125 tsp salt
  • 2.0 eggs
  • 1.0 package vanilla pudding
  • 0.5 cup heavy cream, whipped

Directions

  • 1. Preheat oven to 350°F.
  • 2. Boil water, salt, and butter, add flour, and beat until a ball forms.
  • 3. Remove from heat, beat in eggs one at a time until shiny.
  • 4. Drop 5-6 mounds onto a greased baking sheet, swirl tips.
  • 5. Bake 50 minutes until golden and puffy.
  • 6. Cut slits in puffs, bake 10 more minutes, then cool.
  • 7. Prepare vanilla pudding with reduced milk (1.5 cups), fold in whipped cream.
  • 8. Split puffs and fill with pudding mixture.
