Kansas Beef Liver Supreme

Liver with veggie and cheese topping

Ingredients

  • 1.0 lb beef liver, sliced into 6 pieces
  • 6.0 slices bacon
  • 3.0 medium carrots, diced
  • 3.0 fresh tomatoes, diced
  • 1.0 green pepper, diced
  • 1.0 onion, diced
  • 6.0 slices American cheese
  • 1.5 tsp Italian salad dressing mix
  • 0.5 tsp salt
  • 0.25 tsp pepper
  • 3.0 tbsp shortening

Directions

  • 1. Combine carrots, tomatoes, green pepper, onion, salad dressing mix, salt, and pepper, then chill for 1 hour.
  • 2. Fry bacon and set aside.
  • 3. Add shortening to bacon fat in skillet and fry liver until nearly done.
  • 4. Transfer liver to a cookie sheet.
  • 5. Pile vegetable mixture on each liver slice.
  • 6. Top each with a bacon slice and a slice of cheese.
  • 7. Broil until cheese melts.
