
Liver with veggie and cheese topping

Ingredients
- 1.0 lb beef liver, sliced into 6 pieces
- 6.0 slices bacon
- 3.0 medium carrots, diced
- 3.0 fresh tomatoes, diced
- 1.0 green pepper, diced
- 1.0 onion, diced
- 6.0 slices American cheese
- 1.5 tsp Italian salad dressing mix
- 0.5 tsp salt
- 0.25 tsp pepper
- 3.0 tbsp shortening
Directions
- 1. Combine carrots, tomatoes, green pepper, onion, salad dressing mix, salt, and pepper, then chill for 1 hour.
- 2. Fry bacon and set aside.
- 3. Add shortening to bacon fat in skillet and fry liver until nearly done.
- 4. Transfer liver to a cookie sheet.
- 5. Pile vegetable mixture on each liver slice.
- 6. Top each with a bacon slice and a slice of cheese.
- 7. Broil until cheese melts.
