Holiday Chicken

Chicken and bread stuffing bake

Ingredients

  • 4.5 lb hen, boiled, boned, and cut into pieces
  • 1.0 lb loaf of bread, cubed
  • 3.0 cups broth
  • 1.0 tsp sage
  • 0.25 cup chopped onion
  • 0.5 cup chopped celery
  • 0.25 cup oleo
  • 5.0 tbsp flour
  • 3.0 tbsp chicken fat
  • 1.0 cup milk
  • 1.5 cups broth (for sauce)
  • 3.0 eggs, well beaten

Directions

  • 1. Mix chicken, bread cubes, broth, sage, onion, and celery.
  • 2. Place mixture in a 9x13-inch pan.
  • 3. In a saucepan, melt oleo and chicken fat, then stir in flour.
  • 4. Add milk and broth, cooking until boiling to make a white sauce.
  • 5. Add beaten eggs to sauce, pour over chicken mixture, and work in with a spoon.
  • 6. Bake at 250°F for 2 hours until brown and bubbly.
