Enchilada Casserole

Layered beef enchiladas with sauce

Ingredients

  • 1.5 lb ground beef
  • 0.5 cup chopped onions
  • 1.0 can refried beans
  • 0.5 tsp salt
  • 0.25 tsp pepper
  • 11.0 small flour tortillas
  • 1.0 package taco seasoning mix
  • 0.75 cups water
  • 0.25 cup margarine
  • 0.25 cup flour
  • 0.5 tsp salt (for sauce)
  • 0.25 tsp paprika
  • 2.0 cups milk
  • 1.0 can Ro-Tel tomatoes
  • 2.0 cups shredded cheddar cheese

Directions

  • 1. Brown meat and onions, drain, then add taco seasoning, water, and refried beans.
  • 2. Spread meat mixture evenly on tortillas, roll up, and place in a 9x13-inch pan.
  • 3. In a saucepan, melt margarine, then stir in flour, salt, and paprika until smooth.
  • 4. Add milk and tomatoes, stirring until thickened and boiling for 1 minute.
  • 5. Stir in cheese until melted.
  • 6. Pour sauce over enchiladas.
  • 7. Bake at 350°F for 30 minutes.
