
Layered beef enchiladas with sauce

Ingredients
- 1.5 lb ground beef
- 0.5 cup chopped onions
- 1.0 can refried beans
- 0.5 tsp salt
- 0.25 tsp pepper
- 11.0 small flour tortillas
- 1.0 package taco seasoning mix
- 0.75 cups water
- 0.25 cup margarine
- 0.25 cup flour
- 0.5 tsp salt (for sauce)
- 0.25 tsp paprika
- 2.0 cups milk
- 1.0 can Ro-Tel tomatoes
- 2.0 cups shredded cheddar cheese
Directions
- 1. Brown meat and onions, drain, then add taco seasoning, water, and refried beans.
- 2. Spread meat mixture evenly on tortillas, roll up, and place in a 9x13-inch pan.
- 3. In a saucepan, melt margarine, then stir in flour, salt, and paprika until smooth.
- 4. Add milk and tomatoes, stirring until thickened and boiling for 1 minute.
- 5. Stir in cheese until melted.
- 6. Pour sauce over enchiladas.
- 7. Bake at 350°F for 30 minutes.
