
Spicy beef enchiladas

Ingredients
- 7.0 corn tortillas
- 1.0 lb hamburger
- 1.0 package taco seasoning
- 1.0 lb Cheddar cheese, shredded
- 1.0 medium onion, chopped
- 4.0 tbsp flour
- 1.75 cups water
- 1.5 tsp chili powder
- 0.0 vegetable oil
Directions
- 1. Brown hamburger, drain, and mix with taco seasoning as directed.
- 2. In a saucepan, brown flour over medium heat.
- 3. Add water and chili powder to flour, heating until thickened like gravy.
- 4. Heat a skillet with a little vegetable oil.
- 5. Place 3 tbsp of flour sauce in a pie plate.
- 6. Fry each tortilla in hot oil for 3 seconds per side, then place in pie plate.
- 7. Add a spoonful of flour sauce, hamburger, onions, and cheese to each tortilla.
- 8. Fold tortilla sides and place seam side down in a 9-inch square pan.
- 9. Repeat for all 7 tortillas, adding any remaining mixture on top.
- 10. Bake at 350°F for 15 minutes, then broil until just before browning.
