Cheesy beef tacos

Ingredients

  • 1.5 lb ground beef
  • 1.0 medium onion, chopped
  • 2.0 tsp chili powder
  • 0.0 salt and pepper to taste
  • 0.0 tortillas
  • 1.0 can Ro-Tel tomatoes
  • 1.0 can evaporated milk
  • 1.0 lb Velveeta cheese

Directions

  • 1. Sauté ground beef, onion, chili powder, salt, and pepper until cooked.
  • 2. Heat tortillas until limp.
  • 3. Place small amount of meat mixture on tortillas and roll up.
  • 4. Place rolled tacos in a large casserole or cake pan.
  • 5. Heat Ro-Tel tomatoes, evaporated milk, and Velveeta until cheese melts.
  • 6. Pour sauce over tacos.
  • 7. Bake at 300°F for 20-25 minutes until hot.
