
Crispy chicken and creamy gravy

Ingredients
- 0.0 whole chicken, cut into pieces
- 0.75 cup bacon drippings or oil
- 0.66 cup seasoned flour (for coating and gravy)
- 0.0 water (for soaking and gravy)
- 0.0 milk (for gravy)
Directions
- 1. Soak chicken pieces in water in a covered bowl in the refrigerator overnight.
- 2. Drain water from chicken.
- 3. Heat drippings or oil in a skillet until sizzling.
- 4. Coat chicken heavily in seasoned flour.
- 5. Fry chicken in hot grease at 325°F for 25-30 minutes until golden brown, turning once for 15-20 minutes more.
- 6. Remove chicken and drain on paper towels.
- 7. Leave ⅓ cup grease in skillet with crusties.
- 8. Add ⅓ cup seasoned flour, stirring to form a brown roux.
- 9. Add equal parts water and milk, stirring briskly until thickened into gravy.
