Breakfast Casserole (Patty Meyer)

Sausage and potato overnight bake

Ingredients

  • 2.0 lb sausage
  • 10.5 eggs
  • 1.5 cups milk
  • 1.5 tsp dry mustard
  • 1.0 tsp salt
  • 1.5 lb O’brien potatoes
  • 1.5 cups shredded cheddar cheese

Directions

  • 1. Brown sausage, crumble, and drain.
  • 2. Cook potatoes in sausage skillet for 15 minutes.
  • 3. Mix eggs, milk, dry mustard, and salt.
  • 4. Place potatoes in a 9x13-inch pan.
  • 5. Cover with sausage.
  • 6. Pour egg mixture over all and sprinkle with cheese.
  • 7. Cover and refrigerate overnight.
  • 8. Bake at 350°F for 1 hour or until firm.
  • 9. Let stand 10 minutes before serving.
