
Bacon and hash brown bake

Ingredients
- 1.0 lb diced bacon
- 1.0 medium onion, chopped
- 6.0 eggs, slightly beaten
- 4.0 cups frozen shredded hash browns, thawed
- 2.0 cups shredded cheddar cheese
- 1.5 cups cottage cheese
- 1.25 cups shredded Swiss cheese
Directions
- 1. Cook bacon and onion in a skillet until bacon is crisp, then drain.
- 2. Combine eggs, hash browns, cheddar, cottage cheese, and Swiss cheese in a bowl.
- 3. Stir in bacon mixture.
- 4. Transfer to a 9x13-inch baking dish.
- 5. Bake uncovered at 350°F for 35 minutes until set and bubbly.
- 6. Let stand 10 minutes before serving.
