
Hearty bacon and egg bake

Ingredients
- 1.0 lb sliced bacon, diced
- 1.0 medium sweet onion, chopped
- 6.0 eggs, lightly beaten
- 4.0 cups frozen shredded hash brown potatoes, thawed
- 2.0 cups shredded cheddar cheese
- 1.5 cups small-curd cottage cheese
- 1.25 cups shredded Swiss cheese
Directions
- 1. Cook bacon and onion in a skillet until bacon is crisp, then drain.
- 2. In a bowl, combine eggs, hash browns, cheddar, cottage cheese, and Swiss cheese.
- 3. Stir in bacon mixture.
- 4. Transfer to a greased 13x9-inch baking dish.
- 5. Bake uncovered at 350°F for 35-40 minutes until set and bubbly.
- 6. Let stand 10 minutes before cutting.
