Amish Breakfast Casserole

Hearty bacon and egg bake

Ingredients

  • 1.0 lb sliced bacon, diced
  • 1.0 medium sweet onion, chopped
  • 6.0 eggs, lightly beaten
  • 4.0 cups frozen shredded hash brown potatoes, thawed
  • 2.0 cups shredded cheddar cheese
  • 1.5 cups small-curd cottage cheese
  • 1.25 cups shredded Swiss cheese

Directions

  • 1. Cook bacon and onion in a skillet until bacon is crisp, then drain.
  • 2. In a bowl, combine eggs, hash browns, cheddar, cottage cheese, and Swiss cheese.
  • 3. Stir in bacon mixture.
  • 4. Transfer to a greased 13x9-inch baking dish.
  • 5. Bake uncovered at 350°F for 35-40 minutes until set and bubbly.
  • 6. Let stand 10 minutes before cutting.
