Ingredients
- 1.0 cup vanilla wafer crumbs
- 0.75 tsp melted butter
- 8.0 oz cream cheese, softened
- 0.333 cup sugar
- 1.0 egg
- 2.0 tsp lemon juice
- 0.5 tsp vanilla
- 1.0 lb red tart pitted cherries
- 0.5 cup sugar (for topping)
Directions
- 1. Preheat oven to 375°F.
- 2. Line 12 muffin tins with paper cups.
- 3. Mix wafer crumbs and butter, press 1 tbsp into each cup.
- 4. Beat cream cheese, sugar, egg, lemon juice, and vanilla until smooth.
- 5. Spoon into cups over crumbs.
- 6. Bake 15 minutes, then cool.
- 7. Cook cherries, sugar, and a bit of cornstarch until thick, add red coloring.
- 8. Spoon cherry mix over cheesecakes and chill.
