Moist Oatmeal Cookies

Ingredients

  • 1.0 cup sugar
  • 1.0 cup shortening
  • 5.0 tbsp liquid from boiled raisins
  • 2.0 eggs
  • 2.0 cups oatmeal
  • 2.0 cups flour
  • 0.5 tsp salt
  • 1.0 tsp cinnamon
  • 1.0 tsp nutmeg (optional)
  • 1.0 tsp baking soda
  • 1.0 cup cooked raisins
  • 0.5 cup crushed walnuts

Directions

  • 1. Boil raisins in 1.5 cups water for 12 minutes, cool, reserve 5 tbsp liquid.
  • 2. Cream shortening and sugar.
  • 3. Add eggs, beat until fluffy.
  • 4. Fold in oatmeal, salt, cinnamon, nutmeg, baking soda, and raisins.
  • 5. Add flour alternately with reserved liquid.
  • 6. Stir in walnuts.
  • 7. Drop by teaspoonfuls onto a greased cookie sheet.
  • 8. Bake at 375°F for 10 minutes.
