Peanut Brittle (Microwave)

Ingredients

  • 1.0 cup raw Spanish peanuts
  • 1.0 cup sugar
  • 0.5 cup light corn syrup
  • 0.125 tsp salt
  • 1.0 tsp butter
  • 1.0 tsp vanilla
  • 1.0 tsp baking soda

Directions

  • 1. Mix peanuts, sugar, syrup, and salt in a 1.5-quart casserole.
  • 2. Microwave on high for 8 minutes, stirring after 4 minutes.
  • 3. Stir in butter and vanilla, microwave 2 minutes more.
  • 4. Add baking soda, stir until foamy.
  • 5. Pour onto a greased baking sheet, spread thin.
  • 6. Cool and break into pieces.
